STRAWBERRY CAMEMBERT LAMB WRAPS

1 lb natural Alberta ground lamb*
12 large organic strawberries
1 175g wheel of bio-organic Camembert*
1 small head organic butter lettuce (used here hydroponic lettuce from Broxburn Vegetables*)
2 whole wheat wraps
lamb seasoning, to taste
cooking oil or Pam

Thinly slice strawberries (less than 1/4 inch slices). Set aside.

Thinly slice Camembert (less than 1/4 inch slices). Set aside.

Oil or spray frying pan. Brown lamb. Season with lamb spice. Drain any excess grease. Cover to stay warm.

Place wraps on a platter (if not soft, warm in frying pan over low heat). First spread each wrap with thin layer of lamb, then layer with strawberries, Camembert and lettuce. Fold both ends of wrap toward centre of the wrap (about an inch or so on each end). Roll wrap tightly. Slice roll in half and serve with favourite side salad, fruit or steamed veggies. Serves 2.

BISON PITAS WITH GOAT CHEESE AIOLI

1 lb natural ground bison*
1 large red onion, finely dice half, sliver the rest
1 organic clove garlic, finely diced
Small container of natural or organic goat cheese*
1/2 cup organic plain yogurt
1 small head organic butter lettuce
organic cucumber, sliced into thin rounds
1 organic avocado, sliced into 1/4 inch or so wedges
1 tsp of olive oil (lemon or orange fused are exceptional)
1 tsp of lemon juice
1 tsp tarragon
cumin, coriander, lemon pepper, to taste
2 organic pita pockets
cooking oil or Pam

In a bowl, combine goat cheese and yogurt. Add lemon juice and tarragon and loosely mash together. Flavour with fused olive oil to taste. Add more goat cheese so filling is thick. Refrigerate for 15 to 20 minutes to blend flavours.

Oil or spray frying pan. Fry garlic and onions until soft. Add bison and brown. Season with cumin, coriander and lemon pepper to taste. Drain excess fat. Cover to stay warm.

Slice pita rounds in half and open. Fill each pita pocket with couple tablespoons of bison, slivers of onion, cucumber slices, lettuce and two avocado wedges. Dab in desired amount of goat cheese aioli. Serve immediately with favourite side salad. Serves 4.
