STRAWBERRY CAMEMBERT LAMB WRAPS

BISON PITAS WITH GOAT CHEESE AIOLI
|
1 lb natural ground bison* 1 large red onion, finely dice half, sliver the rest 1 organic clove garlic, finely diced Small container of natural or organic goat cheese* 1/2 cup organic plain yogurt 1 small head organic butter lettuce organic cucumber, sliced into thin rounds 1 organic avocado, sliced into 1/4 inch or so wedges 1 tsp of olive oil (lemon or orange fused are exceptional) 1 tsp of lemon juice 1 tsp tarragon cumin, coriander, lemon pepper, to taste 2 organic pita pockets cooking oil or Pam In a bowl, combine goat cheese and yogurt. Add lemon juice and tarragon and loosely mash together. Flavour with fused olive oil to taste. Add more goat cheese so filling is thick. Refrigerate for 15 to 20 minutes to blend flavours. Oil or spray frying pan. Fry garlic and onions until soft. Add bison and brown. Season with cumin, coriander and lemon pepper to taste. Drain excess fat. Cover to stay warm. Slice pita rounds in half and open. Fill each pita pocket with couple tablespoons of bison, slivers of onion, cucumber slices, lettuce and two avocado wedges. Dab in desired amount of goat cheese aioli. Serve immediately with favourite side salad. Serves 4. *Available at Second To None Meats |
