APPLE N' OATS STUFFED
PEPPERS

2 organic green bell peppers
4 cups Bob's Red Mill Certified Organic Steel Cut Oats**
1 small organic green apple, diced
1 small organic red onion, diced
2 cloves organic garlic, diced fine
200g Fairwinds Goat Cheese with Herbs
4 cups lightly packed organic spinach
1 tbs Spectrum Organic Red Wine Vinegar
1 tbsp favourite spice (used here: Epicure Tapenade)
Himalayan salt and pepper to taste

Preheat oven to 400
0. Prepare oats as directed. While
simmering add apples. Takes approximately 15 to 20 min.

Meanwhile, wash and cut peppers in half lengthwise. Remove seeds and white flesh. Place in baking pan.

Lightly sauté onions and garlic until slightly soft - about 5 min. Combine onion/garlic sauté, goat cheese, spinach, vinegar and spice in bowl. Salt and pepper to taste.

Fill each pepper with equal amounts of filling. Bake in oven for approximately about 25 to 30 minutes or until fork can pierce skins of pepper. Serves 4.             **available at Lakeview Bakery

BOCCONCINI PESTO FLATBREAD

2 8" pizza shells (used here: white rice pizza crust**)
3 tbsp Scarpone's Basil Pesto
3 tbsp hummus
8 large balls of Bocconcini Mozzarella, sliced into 1/4" rounds
20 organic grape cherries, sliced in half lengthwise
Small jar artichoke hearts, break into pieces
Handful fresh organic basil, torn by hand
Handful fresh organic oregano, torn by hand
1 cup L' Ancetre Organic Parmesan, thinly shaved
Favourite spice (use here: Epicure Focaccia)
Carlina's Cucina Chili olive oil

Preheat oven to 450
0. Place pizza shells on baking pan. Lightly spread pesto and hummus on shells. Don't over do it as these spreads have powerful flavours. Lightly sprinkle with spice.

Layer in order over shells: Bocconcini Mozzarella, tomatoes, artichoke, basil, oregano and Parmesan. Sprinkle more spice on top.

Bake in oven until Bocconcini starts to melt - approx 20 min. Grill on low heat for about 3 min or until crust starts to brown. Don't over grill as fresh basil and oregano will burn. Serve with side salad or by itself. Drizzle with chili infused olive oil...this is the flavour enhancer, enjoy! Serves 4.             **available at Lakeview Bakery
